Ingredients
1 cup whole rye berries or cracked rye
4 cups water
1/2 teaspoon salt
1 cup milk (or plant-based milk)
2 tablespoons brown sugar or honey
1/2 teaspoon ground cinnamon
Optional toppings: fresh berries, sliced almonds, maple syrup
Instructions
Rinse the rye berries under cold water and drain.
In a medium saucepan, combine the rye berries, water, and salt. Bring to a boil over high heat.
Reduce heat to low, cover, and simmer for 40-45 minutes, or until the rye is tender and the mixture is thick, stirring occasionally.
Stir in the milk, brown sugar, and cinnamon. Cook for another 2-3 minutes until heated through.
Serve warm with your choice of toppings such as fresh berries, sliced almonds, or a drizzle of maple syrup.
Tips
Soaking the rye berries overnight in water can reduce cooking time by about 15 minutes.
Leftover porridge can be refrigerated and reheated with a splash of milk.
For a savory version, omit sugar and cinnamon and top with sautéed mushrooms and a poached egg.
