- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1 lemon, halved
- 4 sprigs fresh rosemary
Instructions
- Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
- In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, and thyme.
- Rub olive oil all over the chicken, then sprinkle spice rub evenly over the entire surface, including under the skin.
- Stuff the cavity with lemon halves and rosemary sprigs. Tie legs together with kitchen twine and tuck wing tips under the body.
- Place chicken breast-side up on a rack in a roasting pan. Roast for 50-60 minutes, until internal temperature reaches 165°F (74°C) in the thigh.
- Let rest for 10 minutes before carving.
