Ingredients
- 1 rotisserie chicken, about 2-3 pounds
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Remove the meat from the rotisserie chicken, shred or chop it, and set aside. Discard the skin and bones, or save bones for stock.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, add thyme and bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the shredded chicken to the pot and cook for 5 more minutes until heated through.
- Remove bay leaf. Season with salt and pepper to taste. Stir in fresh parsley if using. Serve hot.
