  2. Heat 1 tablespoon oil in a non-stick skillet over medium heat. Add the meat mixture and cook, breaking it up, until browned and cooked through, about 5 minutes. Transfer to a plate.
  3. Wipe the skillet clean. In a shallow dish, spread the baguette halves open. Pour the beaten eggs into the dish and dip the cut sides of the bread into the egg, letting them soak up the mixture.
  4. Heat remaining 1 tablespoon oil in the same skillet over medium heat. Place the baguette halves, cut-side down, in the skillet. Cook until the egg is set and the bread is golden brown, about 2-3 minutes.
  5. Flip the bread and cook the other side briefly, about 1 minute. Remove from heat.
  6. Spread butter on the toasted sides. Divide the cooked meat mixture between the two baguette halves, pressing it onto the bread. Fold the sandwiches closed and serve immediately.
