Ingredients
- 2 cups red seedless grapes, halved
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 French baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil (for brushing)
- 1/2 cup ricotta cheese
- 2 tablespoons honey
- Fresh thyme sprigs for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss grapes with 1 tablespoon olive oil, balsamic vinegar, thyme, salt, and pepper. Spread on one side of the prepared baking sheet.
- Arrange baguette slices on the other side of the baking sheet and brush lightly with remaining olive oil.
- Roast for 10 minutes, then stir grapes and flip bread. Roast for another 8-10 minutes until grapes are softened and bread is golden.
- Let cool slightly. Spread each crostini with about 1 teaspoon ricotta, top with roasted grapes, drizzle with honey, and garnish with fresh thyme.
