Ingredients
1 whole chicken (about 4-5 lbs / 1.8-2.3 kg)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 lemon, halved
4 cloves garlic, smashed
4 sprigs fresh rosemary
4 sprigs fresh thyme
4 large carrots, peeled and cut into chunks
4 large potatoes, peeled and cut into chunks
2 onions, quartered
2 tablespoons all-purpose flour
1 cup chicken broth
Instructions
Preheat oven to 425°F (220°C). Pat chicken dry with paper towels. Rub olive oil all over chicken, then season inside and out with salt and pepper.
Stuff the cavity with lemon halves, garlic, rosemary, and thyme. Tie legs together with kitchen twine.
Place chicken breast-side up in a roasting pan. Arrange carrots, potatoes, and onions around the chicken. Roast for 1 hour 15 minutes to 1 hour 30 minutes, until internal temperature reaches 165°F (74°C) in the thigh.
Transfer chicken to a cutting board, tent with foil, and let rest 15 minutes. Remove vegetables to a serving dish and keep warm.
Place roasting pan on stove over medium heat. Sprinkle flour into pan drippings and whisk for 1 minute. Slowly pour in chicken broth, whisking constantly, until gravy thickens. Season with salt and pepper.
Carve chicken and serve with roasted vegetables and gravy.
Tips
For extra crispy skin, let chicken air-dry in the fridge uncovered for a few hours before roasting.
Leftover chicken can be used for sandwiches or salads.
