Ingredients
4 slices sourdough bread
2 tablespoons butter, softened
2 tablespoons mayonnaise
1 tablespoon prepared horseradish
1 teaspoon Dijon mustard
8 ounces thinly sliced roast beef
4 slices sharp cheddar cheese
1/2 cup arugula
Instructions
In a small bowl, mix mayonnaise, horseradish, and Dijon mustard until combined.
Spread butter on one side of each bread slice. Spread the horseradish mixture on the other side of two slices.
Layer roast beef, cheddar cheese, and arugula on the horseradish-coated sides. Top with remaining bread slices, buttered side up.
Heat a skillet or griddle over medium heat. Place sandwiches buttered side down and cook until golden brown, about 3 minutes. Flip and cook until cheese melts and bread is golden, another 2-3 minutes.
Remove from heat, let cool slightly, then slice in half and serve.
