- 1/2 cup orzo pasta
- 1 cup long-grain white rice
- 2 cups low-sodium chicken or vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Melt butter in a medium saucepan over medium heat. Add onion and cook until softened, about 3 minutes.
- Add orzo and cook, stirring frequently, until golden brown, about 2 minutes.
- Stir in rice, then add broth, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes, until liquid is absorbed and rice is tender.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and stir in parsley if using.
