Instructions
Line a 9x13-inch baking dish with parchment paper, leaving overhang on two sides for easy removal.
In a large pot over low heat, melt butter. Add marshmallows and stir constantly until completely melted and smooth. Remove from heat.
Stir in Rice Krispies cereal until evenly coated. Press mixture firmly into prepared dish using a greased spatula or wax paper. Let cool completely at room temperature, about 30 minutes.
Once cool, invert the Rice Krispie block onto a cutting board and peel off parchment. Cut into 16 equal rectangles (4 rows by 4 cuts).
Place 8 rectangles on a parchment-lined baking sheet. Top each with a generous scoop (about 1/2 cup) of slightly softened ice cream, spreading evenly. Place remaining 8 rectangles on top to form sandwiches. Gently press down.
Freeze sandwiches for at least 2 hours until firm. For chocolate coating, melt chocolate chips with oil in a microwave or double boiler. Dip edges of frozen sandwiches into melted chocolate and return to freezer until set, about 15 minutes.
Wrap individually in plastic wrap and store in freezer for up to 1 week.
Tips
Let ice cream soften for 10-15 minutes at room temperature for easier spreading.
Use a sharp knife sprayed with cooking spray to cut the Rice Krispie treats cleanly.
For extra flavor, try using chocolate or strawberry ice cream instead of vanilla.
