Ingredients
3 tablespoons unsalted butter
1 package (10 oz) marshmallows
6 cups Rice Krispies cereal
1/2 cup prepared frosting (vanilla or chocolate)
1 package (12 oz) candy melts or chocolate chips
1 tablespoon coconut oil or shortening
24 lollipop sticks
Sprinkles for decoration
Instructions
In a large pot, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
Add Rice Krispies cereal and stir until well coated. Let cool slightly.
Stir in frosting until evenly distributed. Let mixture cool until safe to handle.
Shape mixture into 1-inch balls and place on a parchment-lined baking sheet. Insert a lollipop stick into each ball. Refrigerate for 30 minutes.
In a microwave-safe bowl, melt candy melts with coconut oil in 30-second intervals, stirring until smooth.
Dip each cake pop into the melted coating, allowing excess to drip off. Decorate with sprinkles immediately.
Place pops upright in a styrofoam block or stand to set. Let stand until coating hardens.
Tips
For best results, use room temperature frosting to avoid making the mixture too sticky.
If the mixture is too sticky to shape, lightly grease your hands with butter or cooking spray.
Store cake pops in an airtight container at room temperature for up to 3 days.
