Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 8 minutes.
- Add garlic, salt, pepper, and red pepper flakes; cook 1 minute.
- Stir in diced tomatoes and cook 5 minutes.
- Add vegetable broth and cannellini beans; bring to a boil, then reduce heat and simmer 15 minutes.
- Add kale and cook until wilted, about 5 minutes.
- Stir in bread cubes and cook until bread is softened and soup thickens, about 10 minutes.
- Remove from heat. Stir in basil and Parmesan cheese. Let rest 5 minutes before serving.
