Ingredients
2 large russet potatoes (about 1.5 lbs)
2 tablespoons vegetable oil
1 teaspoon dried dill
1 teaspoon dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried chives
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Instructions
Scrub potatoes and slice very thinly (1/16 inch) using a mandoline or sharp knife. Place slices in a bowl of cold water and soak for 30 minutes to remove excess starch. Drain and pat completely dry with paper towels.
Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a small bowl, combine dill, parsley, garlic powder, onion powder, chives, salt, pepper, and paprika.
In a large bowl, toss potato slices with oil until evenly coated. Arrange in a single layer on prepared baking sheets without overlapping.
Bake for 10-12 minutes, rotating pans halfway through, until chips are golden and crisp. Watch closely to prevent burning.
Immediately sprinkle with ranch seasoning while hot. Let cool on baking sheets for 5 minutes before serving.
