  1. Cook ramen noodles according to package directions, but undercook by 1 minute. Drain and rinse with cold water. Toss with beaten eggs until well coated.
  2. Divide noodle mixture into 8 equal portions. On a parchment-lined baking sheet, shape each portion into a thin patty about the size of a burger bun. Refrigerate for 10 minutes to set.
  3. In a bowl, combine ground beef, soy sauce, sesame oil, garlic powder, salt, and pepper. Mix gently and form into 4 patties, slightly larger than the noodle patties (they will shrink).
  4. Heat 1 tablespoon vegetable oil in a large non-stick skillet over medium-high heat. Cook noodle patties in batches, 3-4 minutes per side until golden and crispy. Transfer to a plate.
  5. In the same skillet, cook beef patties to desired doneness (about 4 minutes per side for medium). In the last minute, top each with a slice of cheese and cover to melt.
  6. Assemble burgers: spread mayonnaise (and sriracha if using) on one noodle bun. Top with lettuce, tomato, beef patty, and another noodle bun. Serve immediately.
