In a large bowl, combine chopped noodles, beaten eggs, panko, soy sauce, sesame oil, garlic powder, onion powder, and black pepper. Mix well until evenly combined.
Divide mixture into 4 equal portions. Shape each portion into a patty about 4 inches in diameter, pressing firmly to compact.
Heat vegetable oil in a large non-stick skillet over medium-high heat. Carefully place patties in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
Transfer to a paper towel-lined plate to drain. Serve immediately as a burger bun alternative.

For extra crispiness, refrigerate patties for 15 minutes before frying.
