Ingredients
1 cup quinoa, rinsed
2 cups water
1/4 teaspoon salt
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup extra-virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt and black pepper to taste
Instructions
1. In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and let cool to room temperature.
2. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and mint.
3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, and garlic. Season with salt and pepper.
4. Pour vinaigrette over quinoa mixture and toss gently to combine. Adjust seasoning if needed. Serve at room temperature or chilled.
