These hearty, protein-packed quinoa and black bean burger patties are a delicious vegetarian alternative to traditional burgers, with a satisfying texture and smoky flavor.

Ingredients
1 cup cooked quinoa
1 can (15 oz) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil (for frying)
Instructions
In a large bowl, mash the black beans with a fork until mostly smooth but with some chunks.
Add cooked quinoa, breadcrumbs, onion, garlic, egg, cumin, smoked paprika, salt, and pepper. Mix until well combined.
Form the mixture into 6 patties, about 1/2 inch thick.
Heat olive oil in a large skillet over medium heat. Cook patties for 4-5 minutes per side, until golden brown and heated through.
Serve on buns with your favorite toppings.
Tips
For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water).
Patties can be baked at 375°F for 15-20 minutes, flipping halfway, instead of frying.
Store leftover patties in the refrigerator for up to 3 days or freeze for up to 3 months.
