  1. In a large bowl, mix masa harina and salt. Gradually add warm water and knead until a soft, smooth dough forms. If too dry, add more water 1 tablespoon at a time. Cover with a damp cloth and rest for 10 minutes.
  2. In a small bowl, combine refried beans and shredded cheese. Mix well.
  3. Divide dough into 8 equal balls (about golf ball size). Flatten each ball into a 4-inch disc. Place about 2 tablespoons of filling in the center. Fold edges up and seal, then gently pat into a 1/2-inch thick patty. Keep finished pupusas covered.
  4. Heat a griddle or large skillet over medium-high heat and lightly oil. Cook pupusas in batches, 3-4 minutes per side, until golden brown spots appear and they are cooked through.
  5. Serve hot with curtido (pickled cabbage slaw) and salsa roja.
