Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
2 (3.4 oz) packages instant vanilla pudding mix
3 cups cold milk
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom and up the sides of a 9-inch pie plate. Refrigerate for 30 minutes.
In a large bowl, whisk together the instant pudding mix and cold milk for 2 minutes until thickened. Pour into the prepared crust. Refrigerate for at least 1 hour until set.
In a separate bowl, beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form. Spread or pipe the whipped cream over the pie.
Refrigerate for at least 2 hours before serving. Store leftovers in the refrigerator.
Tips
For a chocolate version, use chocolate instant pudding mix.
Garnish with chocolate shavings or fresh berries if desired.
