Ingredients
1 1/2 cups warm water (110°F)
1 tablespoon active dry yeast
1 tablespoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons unsalted butter, melted
1/4 cup baking soda
1 large egg, beaten
coarse sea salt for sprinkling
1/4 cup yellow mustard
1/4 cup whole grain mustard
1 tablespoon honey
Instructions
In a small bowl, combine warm water, yeast, and sugar. Let stand for 5 minutes until foamy.
In a large bowl, mix flour and salt. Add yeast mixture and melted butter; stir until dough forms. Knead on a floured surface for 5 minutes until smooth.
Place dough in a greased bowl, cover, and let rise in a warm place for 30 minutes until doubled.
Preheat oven to 425°F. Line two baking sheets with parchment paper.
Divide dough into 16 equal pieces. Roll each piece into a 10-inch rope. Place on prepared sheets.
In a large pot, bring 8 cups water to a boil. Add baking soda (carefully, it will foam). Boil pretzel sticks in batches for 30 seconds, turning once. Drain on paper towels.
Place boiled sticks on baking sheets. Brush with beaten egg and sprinkle with coarse salt.
Bake for 12-15 minutes until golden brown. Cool on a wire rack.
While pretzels bake, mix yellow mustard, whole grain mustard, and honey in a small bowl. Serve with warm pretzel sticks.
