Ingredients
4 boneless skinless chicken breasts (about 6 oz each) or 4 white fish fillets (like cod or tilapia)
1 cup finely crushed pretzels (about 2 cups whole)
1/2 cup all-purpose flour
2 large eggs
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
3 tablespoons vegetable oil
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place crushed pretzels in a shallow dish. In a second shallow dish, whisk together flour, garlic powder, and pepper. In a third shallow dish, beat eggs with Dijon mustard.
Pat chicken or fish dry with paper towels. Season lightly with salt (optional, as pretzels are salty).
Dredge each piece in flour mixture, shaking off excess. Dip in egg mixture, letting excess drip off. Press into crushed pretzels to coat evenly.
Heat oil in a large oven-safe skillet over medium-high heat. Cook chicken or fish for 2-3 minutes per side until golden brown.
Transfer skillet to oven and bake until cooked through: chicken to 165°F (about 10-12 minutes), fish to 145°F (about 6-8 minutes).
