Ingredients
1 1/2 cups warm water (110°F)
2 1/4 teaspoons active dry yeast (1 packet)
1 tablespoon granulated sugar
4 cups all-purpose flour
2 teaspoons salt
4 tablespoons unsalted butter, melted
1/4 cup baking soda
1 large egg, beaten
Coarse sea salt for topping
Instructions
In a small bowl, combine warm water, yeast, and sugar. Let stand 5-10 minutes until foamy.
In a large bowl, whisk together flour and salt. Add yeast mixture and melted butter; stir until dough forms.
Turn dough onto a floured surface and knead 6-8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1 hour until doubled.
Punch down dough and divide into 8 equal pieces. Shape each into a ball, then flatten slightly into a bun shape. Place on a parchment-lined baking sheet, cover, and let rise 20 minutes.
Meanwhile, preheat oven to 425°F. In a large pot, bring 8 cups water to a boil and add baking soda (careful, it will foam).
Boil each bun for 30 seconds per side, using a slotted spoon to remove and return to baking sheet.
Brush tops with beaten egg and sprinkle with coarse salt. Using a sharp knife, score a shallow X on top of each bun.
Bake 15-18 minutes until deep golden brown. Transfer to a wire rack to cool completely.
