Ingredients
1 cup granulated sugar
1/4 cup water
1 cup whole almonds or pecans
1/2 teaspoon vanilla extract (optional)
Pinch of salt
Instructions
Line a baking sheet with parchment paper or a silicone mat and set aside.
In a medium heavy-bottomed saucepan, combine sugar and water. Cook over medium heat, stirring gently, until sugar dissolves.
Stop stirring and bring the mixture to a boil. Cook until it turns a deep amber color, about 8-10 minutes, swirling the pan occasionally for even color.
Remove from heat and immediately stir in the nuts, vanilla (if using), and salt. Work quickly as the mixture will harden.
Pour the mixture onto the prepared baking sheet and spread into an even layer. Let cool completely until hard, about 30 minutes.
Once cool, break into pieces or chop as desired.
