Ingredients
3 lbs sweet potatoes (about 4 medium)
1/2 cup unsalted butter, melted
1/2 cup packed light brown sugar
2 large eggs, lightly beaten
1 tsp vanilla extract
1/2 tsp salt
1/2 cup all-purpose flour
1/2 cup packed light brown sugar (for topping)
1/2 cup chopped pecans
1/4 cup unsalted butter, softened (for topping)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Place sweet potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
Peel sweet potatoes and transfer to a large bowl. Mash until smooth.
Stir in 1/2 cup melted butter, 1/2 cup brown sugar, eggs, vanilla, and salt until well combined. Spread evenly in prepared dish.
In a medium bowl, combine flour, 1/2 cup brown sugar, and chopped pecans. Cut in 1/4 cup softened butter using a pastry blender or fingers until mixture resembles coarse crumbs. Sprinkle over sweet potato mixture.
Bake for 30-35 minutes, until topping is golden and filling is set. Let cool for 10 minutes before serving.
Tips
For extra flavor, add 1/2 tsp cinnamon or nutmeg to the sweet potato mixture.
Can be assembled a day ahead; cover and refrigerate. Add topping just before baking.
