Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup crushed potato chips (about 2 cups whole chips)
1/2 cup chopped pecans (optional)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Beat in egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to butter mixture, mixing until just combined.
Gently fold in crushed potato chips and pecans (if using) until evenly distributed.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10-12 minutes, or until edges are golden brown. Centers will be soft.
Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Tips
Use ridged potato chips for extra crunch and saltiness.
Store cookies in an airtight container at room temperature for up to 5 days.
For a more intense salty-sweet flavor, sprinkle a pinch of flaky sea salt on top before baking.
