Ingredients
1 tablespoon vegetable oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup dry red wine (such as Merlot or Cabernet Sauvignon)
2 cups beef broth (low sodium)
1 sprig fresh rosemary
2 sprigs fresh thyme
1 bay leaf

Instructions
Heat oil in a large Dutch oven or heavy pot over medium-high heat. Add onion, carrots, and celery; cook, stirring occasionally, until softened, about 5 minutes.
Add garlic and tomato paste; cook, stirring constantly, for 1 minute until fragrant.
Pour in red wine and bring to a boil, scraping up any browned bits from the bottom. Boil until reduced by half, about 2-3 minutes.
Add beef broth, rosemary, thyme, and bay leaf. Bring to a simmer, then reduce heat to low. Season with salt and pepper.
Use immediately for pot roast, or let cool and refrigerate for up to 3 days.
