Ingredients
1 cup rolled oats
1/2 cup creamy peanut butter
1/3 cup honey
1/4 cup dark chocolate chips
1/4 cup dried cranberries
2 tablespoons chia seeds
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
Line a baking sheet with parchment paper.
In a large bowl, combine rolled oats, peanut butter, honey, chocolate chips, dried cranberries, chia seeds, vanilla extract, and salt. Mix until well combined.
Using slightly wet hands, roll the mixture into 12 equal-sized balls (about 1.5 tablespoons each).
Place the balls on the prepared baking sheet and refrigerate for at least 30 minutes to set.
Store in an airtight container in the refrigerator for up to 1 week.
Tips
Substitute almond or sunflower seed butter for peanut butter if desired.
Add a tablespoon of protein powder for extra protein.
