Ingredients
4 large portobello mushroom caps, stems removed
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
4 hamburger buns, split and toasted
4 slices provolone or Swiss cheese
1 cup fresh spinach leaves
1 large tomato, sliced
1/2 red onion, thinly sliced
4 tablespoons mayonnaise or aioli
Instructions
In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried thyme, salt, and pepper.
Place portobello mushrooms in a shallow dish and pour the marinade over them. Let marinate for at least 10 minutes, turning once.
Preheat grill or grill pan to medium-high heat.
Grill mushrooms for 4-5 minutes per side, until tender and grill marks appear. During the last minute, top each mushroom with a slice of cheese and cover to melt.
Toast the hamburger buns on the grill for about 1 minute.
Spread mayonnaise or aioli on the bottom half of each bun.
Assemble burgers: place a cheese-topped mushroom on each bun, then add spinach, tomato slices, and red onion. Top with the other half of the bun.
Serve immediately.

For extra flavor, add roasted red peppers or avocado slices.
