  2. Heat olive oil in a large skillet over medium-high heat. Add medallions in a single layer (work in batches if needed) and cook until golden brown, about 3 minutes per side. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add shallot and cook, stirring, until softened, about 2 minutes. Add garlic and cook for 30 seconds.
