Ingredients
1 lb pork tenderloin, cut into 1-inch cubes
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp vegetable oil
1 clove garlic, minced
1 tsp ground coriander
1/2 tsp turmeric
1/2 cup coconut milk
1/2 cup creamy peanut butter
2 tbsp lime juice
1 tbsp sriracha (optional)
12 bamboo skewers, soaked in water 30 minutes
Instructions
In a bowl, combine soy sauce, fish sauce, brown sugar, vegetable oil, garlic, coriander, and turmeric. Add pork cubes and toss to coat. Marinate at least 30 minutes.
Thread 4-5 pork cubes onto each skewer.
Grill over medium-high heat, turning occasionally, until cooked through and lightly charred, about 8-10 minutes.
Meanwhile, make the peanut sauce: In a small saucepan, whisk together coconut milk, peanut butter, lime juice, and sriracha. Cook over low heat, stirring, until smooth and warm.
Serve skewers with peanut sauce for dipping.
