Ingredients
4 (6-ounce) white fish fillets (such as cod or tilapia)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs
2 tablespoons milk
3 cups plain popcorn, finely crushed
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Vegetable oil, for frying
Instructions
Pat fish fillets dry with paper towels. Season both sides with salt and pepper.
Set up a breading station: Place flour in a shallow dish. In another dish, whisk eggs and milk. In a third dish, combine crushed popcorn, garlic powder, and paprika.
Dredge each fillet in flour, shaking off excess. Dip into egg mixture, then press into popcorn mixture, coating evenly.
Heat about 1/4 inch oil in a large skillet over medium-high heat. Fry fish in batches, 3-4 minutes per side, until golden brown and fish flakes easily.
Transfer to a paper towel-lined plate. Serve immediately with lemon wedges and tartar sauce.
Tips
For extra crunch, use stale popcorn or spread fresh popcorn on a baking sheet and dry in a 300°F oven for 5 minutes before crushing.
Store leftover fish in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven to maintain crispiness.
