Ingredients
1 cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional)
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne (if using), salt, and black pepper until well combined.
Use immediately to coat bite-sized pieces of chicken. For best results, dip chicken pieces in buttermilk or beaten egg before dredging in the coating mixture.
Shake off excess coating and fry in hot oil (350°F/175°C) for 3-4 minutes until golden brown and cooked through.
Tips
Store any unused coating in an airtight container at room temperature for up to 1 month.
For extra crunch, double coat by dipping in egg and coating twice.
Adjust cayenne to taste for spicier or milder chicken.
