Ingredients
1 lb potatoes (about 2 medium), peeled and cubed
1 cup farmer's cheese or dry cottage cheese
1 medium onion, finely chopped
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1 egg (optional, for binding)
Instructions
Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth. Let cool slightly.
While potatoes cook, melt butter in a skillet over medium heat. Add chopped onion and cook, stirring occasionally, until golden and caramelized, about 10 minutes.
In a large bowl, combine mashed potatoes, farmer's cheese, caramelized onions (with butter), salt, and pepper. Mix well. If the mixture is too dry, add the egg to bind; if using, mix thoroughly.
Taste and adjust seasoning. Let filling cool completely before using to fill pierogi dough.
