Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
4 cups low-sodium chicken broth
1 cup water
1 teaspoon salt
1/2 teaspoon black peppercorns
2 sprigs fresh thyme
1 bay leaf
2 cloves garlic, smashed
Instructions
Place chicken breasts in a single layer in a large saucepan or skillet.
Add chicken broth, water, salt, peppercorns, thyme, bay leaf, and garlic. Liquid should cover chicken by about 1 inch; add more water if needed.
Bring to a gentle simmer over medium heat (small bubbles, not a rolling boil).
Reduce heat to low, cover, and cook for 10-15 minutes, until internal temperature reaches 155°F (68°C).
Remove from heat and let chicken rest in the liquid, covered, for 10 minutes (temperature will rise to 165°F).
Transfer chicken to a plate; strain and reserve poaching liquid for another use if desired.
