Ingredients
4 ripe plantains, peeled and sliced into 1-inch rounds
1 medium onion, chopped
2 medium tomatoes, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
2 cups vegetable broth
1 cup coconut milk
2 tablespoons vegetable oil
Fresh cilantro for garnish
Instructions
Heat vegetable oil in a large pot over medium heat. Add onion and sauté until translucent, about 3 minutes.
Add garlic and ginger, cook for 1 minute until fragrant.
Stir in tomatoes, bell pepper, cumin, paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally, until tomatoes soften.
Add plantain slices and stir to coat with the mixture. Cook for 2 minutes.
Pour in vegetable broth and coconut milk. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, until plantains are tender and easily pierced with a fork.
Using a potato masher or the back of a spoon, mash some of the plantains in the pot to thicken the porridge, leaving some chunks for texture.
Taste and adjust seasoning. Serve hot, garnished with fresh cilantro.
Tips
For a spicier version, add a chopped scotch bonnet pepper along with the tomatoes.
This porridge thickens as it cools; add a little water or broth when reheating.
Serve with fried plantains or crusty bread for a complete meal.
