Ingredients
4 medium potatoes (about 2 lbs), peeled
1 small onion, grated
1 large egg
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
8 ounces Polish sausage (kielbasa), finely diced
Vegetable oil for frying
Instructions
Grate the potatoes using a box grater or food processor. Place in a clean kitchen towel and squeeze out excess liquid. Transfer to a large bowl.
Add grated onion, egg, flour, salt, and pepper to the potatoes. Mix well to combine.
Fold in the diced kielbasa until evenly distributed.
Heat about 1/4 inch of oil in a large skillet over medium-high heat.
Scoop about 1/3 cup of the potato mixture per pancake and flatten into a round shape. Fry in batches, 3-4 minutes per side, until golden brown and crispy.
Drain on paper towels. Serve hot with sour cream or applesauce.
Tips
For extra crispiness, squeeze out as much liquid from the potatoes as possible.
Serve with a dollop of sour cream and chopped chives.
Leftover pancakes can be reheated in a toaster oven.
