Ingredients
4 large flour tortillas (10-inch)
1/2 cup pizza sauce
2 cups shredded mozzarella cheese
1/2 cup sliced pepperoni
1/2 cup sliced black olives
1/2 cup sliced mushrooms
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
Instructions
Lay tortillas flat on a work surface. Spread 2 tablespoons pizza sauce over half of each tortilla, leaving a 1/2-inch border.
Sprinkle 1/2 cup mozzarella over the sauce on each tortilla. Top with pepperoni, olives, and mushrooms. Sprinkle with Parmesan cheese.
Fold the other half of each tortilla over the filling to create a half-moon shape. Press gently.
Heat olive oil in a large non-stick skillet over medium heat. Place 2 quesadillas in the skillet (or cook in batches). Cook until golden brown and crispy, about 2-3 minutes per side.
Remove from skillet and let cool for 1 minute. Cut each quesadilla into 3 wedges. Serve warm with extra pizza sauce for dipping.
Tips
For a vegetarian version, omit pepperoni and add bell peppers or onions.
Serve with marinara sauce or ranch dressing for dipping.
To make in the oven, bake at 400°F (200°C) for 10 minutes, flipping halfway.
