Ingredients
1 1/2 cups all-purpose flour
1 teaspoon instant yeast
1/2 teaspoon salt
1/2 cup warm water
1 tablespoon olive oil
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tablespoons lemon juice
1 clove garlic, minced
1/2 teaspoon ground cumin
2 tablespoons ice water
Salt to taste
Instructions
In a bowl, combine flour, yeast, and salt. Add warm water and olive oil; mix until a dough forms. Knead on a floured surface for 5 minutes until smooth. Cover and let rise for 1 hour.
Divide dough into 4 balls. Roll each into a 6-inch circle, about 1/4 inch thick. Cover with a damp cloth and let rest 10 minutes.
Heat a cast-iron skillet over high heat. Cook each pita for 1-2 minutes per side until puffed and lightly browned. Keep warm in a towel.
For hummus: In a food processor, blend chickpeas, tahini, lemon juice, garlic, cumin, and 1/2 teaspoon salt until smooth. With motor running, add ice water and blend until creamy. Adjust seasoning.
Serve warm pita with hummus.
Tips
For extra fluffy pita, ensure the skillet is very hot before cooking.
Hummus can be made ahead and refrigerated for up to 3 days.
Garnish hummus with a drizzle of olive oil and paprika if desired.
