Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 teaspoon salt
- 1 cup shelled pistachios (unsalted)
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking soda
- 1 tablespoon unsalted butter
Instructions
- Line a rimmed baking sheet with parchment paper or a silicone mat.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
- Increase heat to high and bring to a boil. Insert a candy thermometer and cook without stirring until mixture reaches 300°F (hard crack stage).
- Remove from heat and quickly stir in pistachios, vanilla, baking soda, and butter. The mixture will foam up.
- Immediately pour onto the prepared baking sheet and spread evenly with a spatula. Let cool completely at room temperature.
- Once hardened, break into pieces. Store in an airtight container.
