  2. In a separate bowl, whisk eggs and flour to make a batter. Dip each pork piece into batter, letting excess drip off.
  3. Heat about 2 inches of oil in a wok or deep skillet to 350°F (175°C). Fry pork in batches until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
  4. In a small bowl, mix ketchup, rice vinegar, brown sugar, and soy sauce for the sauce.
  5. Remove all but 1 tablespoon oil from the wok. Stir-fry bell pepper and pineapple over high heat for 1 minute.
  6. Pour the sauce into the wok and bring to a boil. Stir in cornstarch slurry and cook until thickened, about 30 seconds.
  7. Add fried pork back to the wok and toss to coat evenly with sauce. Serve immediately over steamed rice.
