Ingredients
8 oz sharp cheddar cheese, shredded
4 oz cream cheese, softened
3 tbsp mayonnaise
1 (4 oz) jar diced pimentos, drained
1/4 tsp garlic powder
1/4 tsp cayenne pepper (optional)
1 lb ground beef (80/20)
Salt and black pepper to taste
4 slider buns, split and toasted
4 pickle slices (optional)
Instructions
Make pimento cheese: In a bowl, combine shredded cheddar, cream cheese, mayonnaise, pimentos, garlic powder, and cayenne. Mix until smooth. Season with salt and pepper to taste. Set aside.
Divide ground beef into 4 equal portions and shape into thin patties slightly larger than the buns. Season both sides with salt and pepper.
Heat a skillet or griddle over medium-high heat. Cook patties for 2-3 minutes per side for medium doneness. During the last minute, top each patty with a generous spoonful of pimento cheese and cover to melt.
Place each patty on a toasted bun bottom. Add a pickle slice if desired, then top with bun top. Serve warm.
Tips
Pimento cheese can be made up to 3 days ahead and refrigerated.
For extra flavor, add a slice of bacon or caramelized onion.
Leftover pimento cheese is great on crackers or as a dip.
