Ingredients
- 1 ½ cups long-grain white rice

- 2 ¼ cups chicken or vegetable broth
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Rinse rice in a fine-mesh strainer under cold water until water runs clear; drain well.
- In a medium saucepan, melt butter over medium heat. Add onion and cook, stirring, until softened, about 4 minutes.
- Add rice and stir to coat with butter, cooking for 1-2 minutes until edges become translucent.
- Pour in broth, add salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer for 18 minutes without lifting lid.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Garnish with parsley if desired.
