Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 teaspoon salt
- 1 cup piñon nuts (pine nuts)
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking soda
- 2 tablespoons unsalted butter
Instructions
- Line a baking sheet with parchment paper and lightly grease with butter or nonstick spray.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
- Attach a candy thermometer and bring mixture to a boil without stirring. Cook until temperature reaches 300°F (hard crack stage), about 10-12 minutes.
- Remove from heat and quickly stir in piñon nuts, vanilla, and butter until combined.
- Immediately stir in baking soda; mixture will foam. Pour onto prepared baking sheet and spread quickly with a greased spatula to desired thinness.
- Let cool completely, about 30 minutes, then break into pieces.
Tips
- Store in an airtight container at room temperature for up to 2 weeks.
- For a spicy twist, add 1/4 teaspoon cayenne pepper with the nuts.
