Ingredients
2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
1/2 teaspoon peppermint extract
1/4 teaspoon cream of tartar
Red food coloring (optional)
Powdered sugar for dusting
Instructions
Line a baking sheet with parchment paper and lightly dust with powdered sugar.
In a medium saucepan, combine sugar, corn syrup, water, and cream of tartar. Stir over medium heat until sugar dissolves.
Attach a candy thermometer and bring to a boil without stirring. Cook until mixture reaches 300°F (hard crack stage).
Remove from heat and let bubbles subside. Stir in peppermint extract and a few drops of red food coloring if desired (for swirl effect, do not fully mix).
Carefully pour the hot syrup onto the prepared baking sheet. Let cool for 1-2 minutes until edges are firm but center is still pliable.
Using lightly oiled scissors or a knife, cut the candy into small pieces. Quickly shape each piece into a star or roll into balls and flatten slightly.
Allow mints to cool completely on the baking sheet. Store in an airtight container at room temperature.
