  2. Turn the dough onto a work surface dusted with powdered sugar. Roll out to 1/4-inch thickness. Using a 1.5-inch round cutter, cut out patties. Reroll scraps and cut more. Place patties on a parchment-lined baking sheet. Freeze for 15 minutes.
  3. Meanwhile, melt the dark chocolate and coconut oil (if using) in a double boiler or microwave in 30-second bursts, stirring until smooth. Let cool slightly.
  4. Using a fork or dipping tool, dip each frozen patty into the melted chocolate, coating completely. Let excess drip off, then place on parchment paper. Repeat with remaining patties.
