Ingredients
- 1 lb pizza dough, store-bought or homemade
- 2 ripe but firm pears (e.g., Bosc or Bartlett), thinly sliced
- 4 oz Gorgonzola cheese, crumbled
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tbsp honey
- 1/4 cup walnuts, roughly chopped
- Fresh thyme leaves for garnish (optional)
Instructions
- Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes.
- Divide pizza dough into 2 equal portions. On a floured surface, stretch each into a 12-inch round.
- Brush each dough round with olive oil. Sprinkle mozzarella evenly over both, leaving a 1-inch border.
- Arrange pear slices over the cheese. Top with crumbled Gorgonzola.
- Carefully transfer pizzas to the preheated stone or baking sheet. Bake for 12-15 minutes until crust is golden and cheese is bubbly.
- Remove from oven. Drizzle with honey, sprinkle with walnuts and fresh thyme. Slice and serve immediately.
Tips
- For a crispier crust, par-bake the dough for 5 minutes before adding toppings.
- Substitute walnuts with pecans or pine nuts if desired.
- If Gorgonzola is too strong, use a milder blue cheese like Danish blue.
