Ingredients
1 cup creamy peanut butter
1/4 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
24 sheets graham crackers (about 2 sleeves)
2 cups milk chocolate chips
2 tablespoons coconut oil or vegetable shortening
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a medium bowl, beat peanut butter and butter until smooth. Add powdered sugar and vanilla; mix until combined.
Place a layer of graham crackers in the bottom of the dish, breaking to fit as needed. Spread half of the peanut butter mixture evenly over the crackers.
Top with another layer of graham crackers, then remaining peanut butter mixture. Finish with a final layer of graham crackers. Press gently to compact. Refrigerate for 30 minutes.
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring each time, until melted and smooth.
Remove the chilled slab from the dish using the parchment. Cut into 12 bars (3x4 grid). Place bars on a wire rack over a baking sheet.
Pour melted chocolate over each bar, using a spatula to coat all sides. Tap the rack to remove excess. Let set at room temperature or refrigerate until firm.
Tips
For a crunchier texture, use chunky peanut butter.
Store in an airtight container in the refrigerator for up to 2 weeks.
If chocolate thickens while coating, reheat gently.
