Ingredients
1/2 cup creamy peanut butter
1/4 cup unsalted butter, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Instructions
In a medium bowl, beat the peanut butter and softened butter together with an electric mixer until smooth and well combined.
Add the powdered sugar, vanilla extract, and salt. Mix on low speed until the sugar is incorporated, then increase speed to medium and beat until the mixture is light and fluffy, about 2 minutes.
Use immediately as a filling for chocolate cups, truffles, or as a spread. Store any leftovers in an airtight container in the refrigerator for up to 2 weeks.
Tips
For a sweeter filling, add an extra tablespoon of powdered sugar.
If the filling is too stiff, add 1 teaspoon of milk or cream and mix until smooth.
