Ingredients
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup unsalted butter, softened
2 cups powdered sugar
3 tablespoons milk
1/2 teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix 1 cup peanut butter, granulated sugar, egg, and 1/2 teaspoon vanilla extract until smooth.
Roll dough into 1-inch balls and place on prepared baking sheet. Flatten each with a fork in a crisscross pattern.
Bake for 10-12 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
For the filling: Beat softened butter until creamy. Gradually add powdered sugar, milk, remaining 1/2 teaspoon vanilla, and salt. Beat until smooth and fluffy.
Spread about 1 tablespoon of filling on the flat side of one cookie, then top with another cookie to form a sandwich. Repeat with remaining cookies.
Serve immediately or store in an airtight container in the refrigerator.
