Ingredients
1/2 cup creamy peanut butter
1/2 cup honey
1/4 cup unsalted butter
1 teaspoon vanilla extract
3 cups crispy rice cereal
1/2 cup mini chocolate chips (optional)
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a medium saucepan over medium heat, combine peanut butter, honey, and butter. Stir until melted and smooth, about 2-3 minutes.
Remove from heat and stir in vanilla extract.
Add the crispy rice cereal and stir until evenly coated. If using, fold in mini chocolate chips.
Transfer the mixture to the prepared dish and press firmly into an even layer using a spatula or your hands (lightly greased).
Refrigerate for at least 1 hour until firm. Lift out using parchment paper and cut into 12 bars.
