Ingredients
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar, plus more for rolling
1/2 cup packed brown sugar
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
2 tablespoons milk
36 milk chocolate kisses, unwrapped
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt; set aside.
In a large bowl, beat together 1/2 cup granulated sugar, brown sugar, butter, and peanut butter with an electric mixer until light and fluffy, about 2 minutes.
Add egg, vanilla, and milk; beat until combined.
Gradually add flour mixture, beating on low until just combined. Do not overmix.
Shape dough into 1-inch balls. Roll each ball in additional granulated sugar and place 2 inches apart on prepared baking sheets.
Bake for 8 to 10 minutes, until lightly browned and puffed. Remove from oven.
Immediately press a chocolate kiss into the center of each cookie. Let cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Tips
For best results, use creamy peanut butter, not natural or chunky.
Store cookies in an airtight container at room temperature for up to 1 week.
If kisses become too soft, refrigerate them before unwrapping.
